Brian's cuisine style is one of refined simplicity, taking his favorite dishes and foods and making them with the mindset of "but better." Often asked what his favorite thing on his menu his response is "The quality." Brian directs his team to make sure no matter what you are cooking and preparing that they all remember that "Quality Gets All."

Javier is a seasoned New York City chef,  working at some of the top restaurants in NYC,  and before helming the kitchen of Bird Dog was our opening sous chef. His style is refined, simple, and leaves you full and wanting to come back. He loves when everyone is working together for the common goal of making guest happy. When not working he loves to relaxing with his friends and family.
