Founder & Culinary Director
Brian Cartenuto
Brian's cuisine is rooted in refined simplicity—taking the dishes he loves most and reimagining them through the lens of "but better." When asked his favorite thing on the menu, his answer is always the same: "The quality." For Brian, it's less about a single dish and more about a standard—he reminds his team daily that "Quality Gets All."
As Bird Dog continues to grow, Brian is guiding it into a new chapter—one centered on comfort, acceptance, and belonging. Inspired by his two young daughters, Grace and Poppy, he strives to create a space where guests feel the same warmth and care he gives his family at home. For Brian, Bird Dog isn't just a restaurant—it's a table where everyone has a seat.
Executive Chef
Javier Herrera
Javier is a seasoned New York City chef who has worked in some of the city's most celebrated kitchens. Before stepping into the role of Chef de Cuisine and now the Executive Chef at Bird Dog, he was our opening sous chef, helping lay the foundation for what we are today. His cooking style is refined yet approachable—food that feels simple, soulful, and leaves you both full and wanting to come back.
In the kitchen, Javier thrives on collaboration. He believes the magic happens when everyone works together toward one common goal: making guests feel cared for and happy.
Outside of work, Javier finds balance in the things he loves most—kicking a soccer ball around, relaxing on the beach, and spending time with his friends and family. That mix of discipline, joy, and community shows up in his food and in the spirit he brings to Bird Dog every day.


Sous Chef
Alejandro "Alex" Santos
Alex has been part of Bird Dog since nearly the beginning, helping shape our kitchen for over three years. Originally from Central America, he brings quiet confidence, a sharp sense of humor, and an unwavering commitment to upholding the standards that define our cooking.
Known for his calm presence on even the busiest nights, Alex balances discipline with deep empathy—always ready to support his team and make sure every detail is right. Outside the kitchen, he values what matters most: time with his family and friends, a good soccer match, and living with balance between work and life.
Alex embodies the spirit of Bird Dog—serious about quality, but never without warmth and heart.
